Yeast assimilable nitrogen (YAN) is measured as the total amount of ammonia and amino acid nitrogen in a wine or juice. Since yeasts need nitrogen to survive and reproduce, this is a critical measure of the capability of a wine or juice product to support the growth of yeasts. In a juice, must or wine, YAN could indicate the capability of of the solution to support the growth of yeasts.
